One Day Course

£85 to £125 per person
Throughout the year we offer our one-day cookery courses to all who are interested in joining us, be it a seasoned cook or a total beginner, this course is welcome to all who are interested in a day of cooking, tasting and exploring all of the world class ingredients Cornwall has to offer.
This course offers you the chance to learn how to prepare a 3 course meal in our purpose built kitchen here in St Ives. As the course begins, be welcomed with fresh, locally roasted coffee, pastries and an overview of the menu we will preparing that day. Working your way through the starters, mains and pudding. The day will culminate in enjoying a three course meal that you have prepared yourself, under the tuition of our award winning chefs. And if you like, with wine to match on each dish, paired to the flavour profiles we will be enjoying that day.
Whether it is fish, meat, fresh pasta or vegetables we will cover a whole host of techniques on that day to restaurant standard.
We are at the hands of the wonderful producers and suppliers this bountiful county has to offer, so the menu will be ever changing. If you have any dietary requirements, it is imperative to let us know if advance so we can plan accordingly, giving you the best possible experience here at the school.
Keep an eye for our vegetarian menus that we will be offering regularly for those who prefer not to eat meat. We are however unable to mix plant based into menus where meat / fish are planned on that day.

Our one-day courses are designed for all abilities. Even though the menus we will be putting together will be of restaurant quality we have given ourselves enough time to achieve it all to a very high standard. All equipment, knives and aprons are of course supplied ready for you to use. You need bring nothing, but perhaps a pen and paper if you wish to make notes through the day. We may make a little mess, so we advise wearing appropriate clothing and wear closed toe shoes… just incase.
Half day workshops
10:00 till 13:00 / 14:00 till 17:00
£45 to £65 per person
Half day workshops are perfect for people who are interested in a specific skillset, like pasta, or seafood or even cake decorating. We will hold these courses throughout the year and will concentrate on one particular type of cookery. The course title will be very clear on what will be under tuition that day. You will get learn all you can and as courses are small, no more than a 1:8 teacher to student ratio, you really get to spend time with the teacher so you can really take everything you can from the day.
Skill levels will vary, sometimes it will be an introduction to pasta, whereas sometimes it will be a professional chef lesson on canapés from either Jeffrey or a guest chef we have invited on the day.
Either way you need bring nothing, but perhaps a pen to make notes, but course notes will be given after. We supply aprons to every lesson, we make some mess however, so perhaps dress accordingly.
